This might come as a surprise to you but I cook every night. And usually I prefer to make something simple and easy. I also love to make healthy meals and things that are easy to grab and go. Enter noosa yoghurt. I eat yoghurt in some form every day. Usually I put it in a breakfast smoothie, but I love to find ways to get yoghurt in to other things as it’s usually a healthier option.
Also, I don’t eat a ton of meat so I need to find ways to get enough protein in my diet. Which again, yoghurt usually provides that protein for me.
I love frozen things so you’d think I would have made some sort of frozen yoghurt pops before, but this was my first time. And I wanted it to be something easy and delicious.
I did the recipe all to taste, because everyone is different, and it’s so easy you can make it to your taste. In a large bowl, mix noosa coconut yoghurt, a squeeze of lime, mashed raspberries, and extra coconut flakes if you like, then pour into a popsicle mold. Freeze for a few hours, and voila — a healthy snack that’s a little more fun. Of course, you can always just eat the yoghurt plain, add a squeeze of lime, and some coconut and raspberries, but the popsicles are really easy to make.
I love ice cream and sweets — especially at night — so this is a healthier option for me to grab but still feel like it’s a treat.
